Do you try to do a meatless meal one day out of the week? I know we do. Today I have an easy eggplant recipe to share. Don’t be afraid of that big purple veggie. It’s delicious and easy to cook. I found this recipe while perusing Pinterest. It is now one of my favorites. I tweaked it a bit and made it my own.
Eggplant sliced in half vertically (one half for each person) drizzled in olive oil
Your favorite red sauce
Tomato sliced – I use Roma but you can use whatever you like
Parmesan cheese
Feta cheese – if you don’t like feta or maybe the kids don’t you can sub mozzarella or provolone
Directions:
Broil the eggplant slices flesh side down on a baking sheet for 20 mins. Remove from oven and flip the eggplants over. Spread on the red sauce. Place tomato slices over the sauce. Sprinkle on Parmesan cheese. Top with your choice of feta, mozzarella, or provolone cheese. Bake at 400 degrees until the cheese is melted (feta will only melt slightly). And voila!
