7 Back To School Breakfast Ideas that Work

I know cereal is quick and easy but if your kids are anything like mine, they won’t last an hour on cereal alone. Here are a few of my favorite “Back to School” breakfast ideas that provide a well-rounded meal to start the day.Untitled design

1. Breakfast Tostadas – Top one tostada shell with refried beans, scrambled eggs, tomatoes and cheese. Kids love the all in one and it’s perfect for DIY topping bar.

2. Spinach Smoothies – I allow my kids to help with this one as well. Combine 8 oz of milk with 1/2 of a frozen banana, 1/2 C. of spinach and 1 package of chocolate instant breakfast. Play around with taste and consistency adding ice, frozen berries and greek yogurt.

3. Yogurt Parfaits – If your kids do love cereal, offer it up in parfait form! We alternate greek yogurt, Cheerios and fruit. It’s really a hit when I put it in a fancy cup.

4. Stromboli – A good family friend Jane always made amazing Stromboli for dinner. The idea of using it for breakfast is the perfect way to incorporate eggs and contain the meal as an all in one. I like this recipe from CherylStyle.

5. German Pancakes – German Pancakes do take some time in the oven, but the prep work is quite easy. Variations on the recipe are endless, but they all pack a protein punch alternative to the traditional hot cake.

6. Kabobs – Use skinny straws as kabob sticks to eliminate early morning sword fights. Get creative alternate carbs, protein and fruit. Here are a few combos that my kids love: banana bread, turkey sausage, strawberry and waffle, banana, hard boiled egg. Yogurt makes for a fun kabob dip.

Freeze ahead waffles, pancakes and french toast for quick kabob filler.

7. Oatmeal Breakfast Bars – While not a meal in itself, the bars pair well with a hard boiled egg for a very simple and easy meal. This recipe is wonderful as is, but also quite nice with 1/2 C. of craisins mixed in.
