As busy parents, it can be difficult to find the time or energy to cook a tasty meal every night, let alone prepare an after-dinner delight.
Luckily, as a big fan of easy desserts, I’ve found no-bake cheesecakes are always quick, simple, and delicious. If tonight is a pizza kind of night, you might consider an easy but scrumptious dessert (once you’ve caught your second wind, that is).
No-Bake Marshmallow Whipped Cheesecake
For the Graham Cracker Crust:
40 squares of graham crackers (crushed) *
1/2 cup sugar
1/2 cup butter or margarine (melted)
*For fun: place graham crackers in a large Ziplock bag and set it on the floor. Let your kids step on the bag to crush up the crackers.
Mix the above ingredients. Press into bottom and sides of a 9″ x 13″ greased pan. Reserve 1/2 cup for the topping.
For the Filling:
40 marshmallows
3/4 cup milk
2 – 8-oz. packages of Philadelphia cream cheese (softened)
12-oz. container of Cool Whip
Melt the marshmallows and milk over low heat. Beat cream cheese then add marshmallow mixture. Let it cool. Fold in the Cool Whip. Spread into the crust and sprinkle with the remaining graham cracker crust. Refrigerate until set.
